Mom's Take on Beef Stroganoff

Growing up in the 70's there was a favorite Beef Stroganoff recipe that my mother prepared.She did this on a budget, and the secret to having tender meat, and a rich sauce. The Beef was on the stove in the morning, and by mid-afternoon she added the sour cream and let all the flavors meld together. At supper time, she boiled the pasta, toasted the garlic bread, and we had a hearty, home cooked meal.

Mom's Take on Beef Stroganoff

A take on traditional Beef Stroganoff from my mother's recipes.
Ingredients
  • • 1 lb lean round steak (cubed)
  • • 1 can tomato soup
  • • 1 can mushrooms
  • • 1 medium green pepper (chopped)
  • • 1 stalk of celery (chopped)
  • • 1 medium Onion (Chopped)
  • • 2 cloves of Garlic (finely chopped)
  • • 1 tablespoon Worcestershire Sauce
  • • 1 Cup Sour Cream
  • • 2 tablespoons of Olive Oil
  • • ½ teaspoon salt, ½ teaspoon of pepper.
  • • Pasta for serving
Instructions
  1. Cube steak into uniform pieces about 1"
  2. Chop onions, green pepper, celery and garlic.
  3. Open cans of Tomato soup, Mushrooms.
  4. In a non-stick frying pan add the Olive Oil, wait about 1 minute and add onions.
  5. Saute until translucent, then add beef.
  6. Cook until all beef is seared.
  7. Add green peppers and celery.
  8. Cook for an additional minute, then transfer everything to a dutch oven.
  9. Turn heat up to medium on the stove and add your soup, mushrooms, and liquid, then your sauteed meat mixture and Worcestershire Sauce.
  10. Allow to come to a low boil and then cover, turn heat down to medium low
  11. CAUTION: Boiling will cause the soup to burn on the bottom of the pan, All you want is a gentle simmer.
  12. An hour before serving, keep at a simmer and add Sour Cream, stir until cream is melted in the pot.
  13. Let simmer and serve over pasta.
