Cucumber Avocado Soup - Great Hot or Cold.

Cucumber Avocado Soup. Slaving over a hot stove to prepare a meal for your family when it is even hotter outside is no fun. But after a day in the sun, what is better than a cold refreshing soup that is not only tasty and good for you.

My cucumber and avocado soup is one of my favorite stand by’s for  the dog days of summer. Serve hot or cold, this is one soup that goes great with any picnic. Watch the Video Here.

An anytime soup that is healthy and packed with flavor.
Ingredients
  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 inch ginger
  • One small onion, diced
  • 1 tablespoon lemon juice
  • 4 cups peeled, seeded and thinly sliced cucumbers, divided
  • 1½ cups vegetable broth, or reduced-sodium chicken broth
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground pepper
  • Pinch of cayenne pepper
  • 1 avocado, diced
  • ¼ cup chopped fresh parsley, plus more for garnish
Instructions
  1. Dice your onion.
  2. Peel, and de-seed your cucumber. Then Dice.
  3. Mince your garlic
  4. Mince your ginger
  5. measure out your seasonings
  6. Now in a sauté pan pre heated to about medium high, add your oil and onions.
  7. Lightly season with salt and pepper.
  8. After about a minute or so, when the onions are sweated add your lemon juice and cook for about another minute then add about 3 ½ cups of cucumber.
  9. Lightly season with salt and pepper.
  10. Sauté for another couple of minutes to start to enhance the cucumbers flavor then add your stock.
  11. Lightly season with salt and pepper.
  12. reduce heat and simmer for 5 to 7 minutes until cucumbers are soft.
  13. Now we can make our soup. Either using a blender, or my favorite a hand blender. Add your avocado and parsley then blend the mixture until smooth.

Hot soup in a blender is dangerous.

CAUTION: Splattering will occur when blending hot liquids in a blender.  The blending process actually lowers the pressure in the liquid and therefore the boiling temperature, so the liquid actually starts to boil, and the steam rushes to the cold air above your liquid, usually splattering whatever it goes through.  If the top of the blender is air tight, the air pressure builds up as it gets heated and a mess.
