Chicken Noodle Soup

Warm and inviting. A nutritious Chicken Noodle soup on a budget.
Ingredients
  • 1 package of chicken thighs, with skin and bones.
  • 2 900 ml low sodium chicken stocks
  • 2 peeled and chopped carrots
  • 1 peeled and chopped onion
  • 2 stalks of celery chopped
  • 250 g of dried pasta (elbows or even spaghetti, broken into pieces)
  • 1 tablespoon of extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp cummin
  • 2 tsp salt
  • t 1st pepper
Instructions
  1. In 4 liters of water, add 1 tsp of salt and bring to a boil on high temperature.
  2. Add chicken thighs when water is boiling and reduce heat to medium.
  3. Cook chicken for 45 minutes, then remove from water and let cool.
  4. Turn off the stove, discard water, and wash pot.
  5. Chop onion, celery and carrots to the same size, set aside.
  6. If you have disposable gloves, these can be used to keep hands clean for the next part.
  7. After chicken has cooled, remove skin and pull all meat from bones, set aside.
  8. Discard bones and skin.
  9. Tear the meat into bite-size pieces, about 1 inch in length. Set aside.
  10. Put pot back on medium high burner and add olive oil.
  11. After about 1-minute add onions, celery and carrots to oil and stir until the onions are translucent (about 3 minutes). This brings out the flavors.
  12. Add all spices, garlic, cumin, remaining salt and pepper. Stir.
  13. Then add chicken stock, chicken meat, stir, add pasta reduce heat to medium and cover for 30 minutes.
  14. After 30 minutes, reduce heat to low, cover and let simmer until ready to eat, after 30 minutes is fine, the longer it simmers, the more flavor it develops.

This recipe yields a lot of chicken soup, it will keep in the fridge for 2 days, but I prefer to divide it up into single servings and freeze. Then whenever I want soup, it is just a microwave away. Next week...squash soup...This is super simple and oh so delicious.
