Tomato Chutney

In my latest youtube video on Ravioli, I made a tomato chutney to put the Ravioli on.  I didn't film it but here is the recipe for anyone wanting to give it a try. A chutney is a sauce that comes from the Indian continent and is used in all kinds of cuisine today.  It can be considered the relish of anything.  Today my tomato chutney is the basis for a lot of my dishes.

How To Make

It only takes a little over an hour, and when your done you have a rich dark sauce.  you can store this in a mason jar, so ling as it is sterilized as the sugars and tomatoes can go bad.

Prep time: 15 mins
Cook time: 1 hour 15 mins
Total time: 1 hour 30 mins
Serves: 1 kg

Tomato Chutney

Ingredients

  • 500g red onion, finely sliced
  • 1kg tomato, chopped and deseeded.
  • 4 garlic cloves, sliced
  • 1 inch ginger, peeled and chopped
  • 250g brown sugar
  • 150ml red wine vinegar
  • ½ tsp paprika
  • Paprika

Instructions

  1. Put all the ingredients into a large pan.
  2. Bring to a gentle simmer, stirring frequently.
  3. Simmer for 1 hr
  4. Turn heat up to bring to a gentle boil.
  5. Once the mixture turns dark and shiny.
  6. Remove from heat, cool.
  7. You can store in refrigerator in a sterilized jar for up to 6 weeks.

What can it be used for?

Some say that this chutney is so good, you could take a bath in it.  I wouldn't recommend that, but use it as a dip for fresh vegetables, on pasta, hot or cold, or with some naan bread to scoop it up.  What every you want to use this bright and flavor-able condiment with is fine by me.  Just enjoy the tastes.
