Chicken Lollipops - How to French trim and cook budget chicken legs.
A play on the name, a joy to eat. These chicken legs are prepared using a technique called frenching. It means to remove the meat from the bone. In this case, the drumstick bone is completely removed from the skin and tendons to be free floating. Once cooked it looks like a lollipop.
To French the Drumsticks
I posted a video on this technique. You first have to remove the skin and connective tissue from the top knuckle. The repeat on the bottom one. With your hands, free the meat from the bone. Roast in the oven at 350 for 35 minutes, then finish in a pan, basting with olive oil and butter.
