The Pasta Sauce Series - Original Alfredo
When in Rome, in 1914, the Original Alfredo Sauce was created. Even though it is not hugely popular in Italy, Alfredo Sauce and all its iterations is cherished in North America.
I have been making this wrong for many years. Using just cream, Parmesan cheese and pepper, I would make a pseudo Alfredo Sauce, or as I have come to call it Parmesan Soup.
Now with the Original recipe in hand, here is how I made an authentic Alfredo Sauce.

Original Alfredo Sauce

The original Recipe from 1914
ingredients:
- 2 cups Heavy Cream
- 1/4 Cup Unsalted Butter
- 1 1/2 cups Shredded Parmigiano Cheese
- 1/8 tsp of fresh nutmeg
- salt and pepper to taste.
instructions:
- Melt butter in a saucepan. Then add Heavy Cream.Bring Heavy cream up to a high simmer. Add nutmeg. Do not boil.
A little at a time add cheese until it is all incorporated and smooth.
Taste, and if necessary add salt and pepper.
