Being a Maritimer, seafood plays an important part in my diet and cooking. Tacos are one of my families favorite treats, and we made it even healthier by incorporating shrimp as the protein.

To make these here's what you will need:
4 taco shells
17 peeled shrimp
1 tablespoon of homemade taco seasoning (see Chicken Skillet Tacos)
1 cup of Pico de Gallo

My take on the tradition Pico recipe. Something that is handy to have any time of the year.
- 1/2 Green Pepper Diced finely
- 1/2 Red Onion Diced Finely
- 1 large tomato diced finely
- Juice of 1/2 Lime
- 2 tablespoons of cilantro finely chopped
- 1/2 teaspoon salt
- 1/2 teaspoon fresh ground pepper
- Dice all ingredients and add in a non-reactive bowl.
- Mix and season
- Refrigerate for 1 hour
After you have your Pico chilled. Saute your shrimp. At the last minute add the taco seasoning and a table spoon of water. When the shrimp is coated, remove from heat.
Dice 5 shrimp and add to Pico for that extra bite of shrimp in your taco's.
Assembly is easy, making sure your Pico mixture is on the bottom, then add 3 shrimp per taco top with shredded lettuce and serve.
