Budget Chicken Salad with No Compromise on Flavor
Every now and then we find hidden gems at the local grocery store. This time I found Chicken legs on sale. But what to do with them. Granted these are packed with the flavorful dark meat, and bone, but it gets rather boring cooking chicken legs when you bought 5 or 6 packages.
Well here is my from scratch Chicken Salad recipe.

First, you want to prepare your ingredients.
Clean and boil your chicken legs (2) for 60 to 90 minutes, or until the meat is tender and falling away from the bone. Drain and let cool down so you can peel all the meat from the legs.
Remove the meat from the bone and chop into small pieces. Set aside.
Finley dice 2 stalks of celery and 1/2 of a shallot.
Mix up in a bowl and add about 1 cup of Mayo. Homemade, or process it is up to you.
Take 2 slices of fresh bread, spread a little mayo on each slice and then add about 1 cup of chicken salad and spread. Don't forget to add seasoning, a little last and pepper,
