Coffee-Chipotle Crusted Pork Tenderloin

I usually buy my proteins once a month and then vacuum seal servings with my food saver. Sometimes I get a great deal on pork tenderloins, but need to come up with a way not to get bored with the same thing over and over.

Enter a simple coating for pork tenderloin that gives you the intense earthiness of coffee and the gentle heat of the chipotle pepper. Add some simple garlic mashed potatoes, you have a great meal to serve.

Coffee-Chipotle Crusted Pork Tenderloin

What to do when you buy pork tenderloin in bulk. Try this recipe for a quick flavorful treat.


For the pork
  • 1 Pork Tenderloin
  • 2 tablespoons of instant espresso coffee powder
  • 1 tablespoon chipotle powder
  • salt and pepper
Garlic Mashed Potatoes
  • 3 new potatoes skin on
  • 1 clove of garlic sliced per person
  • 1 teaspoon butter
  • 1 tablespoon of 10% BF cream or half and half
  • 1 tablespoon of fresh salsa


Cooking the Pork
  1. Trim off the silverskin and extra fat off of the pork loin.
  2. Mix the coffee, chipotle, salt and pepper and coat the tenderloin.
  3. In a frying pan sear all sides and the ends of the tenderloin.
  4. Place pork in a 400-degree oven for 15 to 18 minutes until the internal temperature is 145 F. Then remove and let rest for 5 minutes 
  5. Slice in the bias and serve with some salsa.
Cooking potatoes
  1. Slice potatoes and place in salted boiling water.
  2. Cook until tender, and add sliced garlic 10 minutes before finished.
  3. Drain potatoes, and add butter and cream, then mash incorporating the garlic and letting the skins add a textural component.
  4. Serve with pork and garnish with a sprig of rosemary.
